Ingredients:
- 5-6 yams
- 1 cup dried apricots, chopped
- ¼ cup dried cranberries
- 1 cup sweet wine (Marsala or Madeira)
- 1 cup orange juice, freshly squeezed
- Zest of 1 orange
- 1-2 tbsp butter
- ¼ tsp cinnamon
- ⅛ tsp allspice
- Dash of salt
Preparation:
- Preheat oven to 350°F
- Peel yams and cut into servable chunks
- Parboil yams for 3-4 minutes
- Place yams in baking sheet or ovenproof casserole
- Bake for 45-60 minutes, uncovered, until tender to the center
- In saucepan on med-high heat, mix wine, cinnamon, allspice, salt
- Boil and reduce by half
- Add orange juice, butter, apricots, cranberries
- Boil and reduce by half
- Pour sauce over yams, cover, and return to oven for 10-15 minutes
- Move yams to warm bowl, and drizzle sauce/fruit mixture over top for serving
Notes:
- This is a good low-sugar variation to yam dishes traditionally served at holiday time. It adds a tart complement to roasted meats.
